Popups Are A Timesuck
We’re a new food business. A lot of new food businesses do popups to sell some product.
In a way I love this, because it’s kind of like the “Minimum Viable Product” approach to starting a food business.
The problem with popups is that they’re labor intensive and everything is ad hoc.
You’ll spend time setting up stuff for a one time event. Each location/store is different, the lessons learned aren’t often reusable.
There’s value in popups of course, but for us we found ourselves scrambling for each one, and in the end I think we’re better suited investing the same time into building processes that will serve us over and over.
